My #1 Breakfast Hack

When you travel, do you have a hard time “packing light”? I do!! People are always shocked by the things I pack in my suitcase.

This past weekend, my husband Eric and I went to this lovely little beach town on Long Island. And just like every trip I take, I couldn’t leave without the essentials: salt, pepper, olive oil, and…steamer baskets?!

Yes. I use these EVERY SINGLE DAY when I make breakfast – whether I’m at home or traveling.

These baskets are my breakfast “secret weapon”. They make it clean and simple to whip up my famous Superhuman Breakfast in just 15 minutes.. Not only that, they let me cook like 10 different foods at the same time!

How To Use The Baskets:

It’s as simple as it looks. Fill a small to medium sized saucepan (whatever your steamer basket can fit in!) with 2-3 inches of water and bring to a boil. Then chop whatever veggies you love, pile the baskets on top of your pot, and once they’re gently steamed, take them off the pot enjoy!

Laura’s Pro Tips:

  • Stack the veggies in order of their cooking time. For example, sweet potatoes usually take the longest time to cook so I will always put their basket right above the boiling water — then stack the other veggie-filled baskets on top.
  • You can even cook your eggs in the pot of water under all the steamer baskets — how’s that for efficiency?
  • I cook ALL of my breakfast veggies in these baskets like kale, collard greens, dandelion greens, peas, tomatoes, mushrooms, squash, sweet potatoes and more! The sky’s the limit ;)
  • I always stack my greens on top because they cook very quickly

    The weirdest thing I take in my suitcase when I travel are my small Franklin Method balls. The pair is SO perfect for unwinding the kinks that inevitably come from travel, whether in a car or a plane!
